  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) pumpkin purĂ©e
  • 2 cloves garlic, minced
  • ½ lemon, juiced
  • â…“ cup tahini
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • Âľ teaspoon ground cinnamon
  • pinch cayenne pepper
  • ÂĽ cup olive oil
  • ÂĽ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and garlic. Pulse until broken down.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. Blend while slowly adding olive oil until combined.
  3. Continue blending for 2-3 minutes. Gradually add ice water until desired creamy consistency is achieved.
  4. Transfer to a serving bowl and garnish with olive oil and toppings of choice.
