  • 1/2 cup green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream (or coconut milk for a lighter option)
  • 1 tsp Cajun seasoning
  • 1/2 tsp thyme
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large skillet, heat vegetable oil over medium heat. Add the sliced chicken sausage and brown for about 5-7 minutes. Remove and set aside.
  2. Using the same skillet, sauté onion, green bell pepper, and garlic until softened (about 3-4 minutes).
  3. Sprinkle flour over the vegetables and stir to form a roux; cook for 1-2 minutes.
  4. Gradually add chicken broth while stirring continuously to avoid lumps; bring to a simmer for about 5-7 minutes until thickened.
  5. Stir in heavy cream, Cajun seasoning, thyme, salt, and pepper. Return sausage to the skillet and mix well.
