  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 granny smith apple, cored and diced
  • 1 cup dried cranberries
  • 1 cup quinoa (uncooked)
  • 2 cups apple cider (or juice)
  • 2 tablespoons minced red onion
  • 1/2 cup chopped pecans, roasted
  • 2 tablespoons maple syrup
  • 1 teaspoon minced shallot
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F. Toss diced sweet potatoes with olive oil and roast on a rimmed cookie sheet for about 15 minutes until lightly browned and soft.
  2. Rinse quinoa well. In a medium saucepan, combine quinoa and apple cider, bring to a boil, then simmer covered for about 15 minutes. Add cranberries just before finishing.
  3. In a large bowl, mix cooled quinoa with roasted sweet potatoes, cranberries, apples, and red onion.
  4. For the vinaigrette, blend maple syrup, shallot, Dijon mustard, apple cider vinegar, salt, and pepper in a small food processor while gradually adding olive oil until smooth.
  5. Drizzle vinaigrette over salad and toss gently to coat.
  6. Top with roasted pecans for added crunch.
