  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (turkey or plant-based option)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C. Toss the butternut squash with olive oil, salt, and pepper; spread it on a parchment-lined baking sheet.
  2. Roast the squash for about 15-20 minutes until tender.
  3. In a separate baking sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast for another 20-30 minutes until golden brown.
  4. Cook bow tie pasta according to package instructions until al dente; reserve some pasta water before draining.
  5. In a skillet over medium heat, add olive oil and sauté sliced smoked sausage until browned. Remove from heat.
  6. In the same skillet, add minced garlic and cook until fragrant; then stir in butter and cooked pasta.
  7. Combine roasted squash, Brussels sprouts, sausage, and fresh thyme into the skillet; mix gently to combine.
