  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • 2 tablespoons taco seasoning
  • 8 ounces shredded Colby jack cheese
  • 12 ounces tortilla chips (about of the bag)
  • Optional garnishes: sour cream, diced tomatoes, chopped cilantro

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a skillet over medium-high heat, cook ground beef with diced onion, salt, and pepper for about 6–7 minutes until browned.
  3. Stir in water and taco seasoning; cook for another 2–3 minutes until liquid reduces.
  4. Layer half of the cheese in a greased bundt pan followed by half the beef mixture and one-third of the tortilla chips.
  5. Repeat with remaining cheese and beef, finishing with the last third of chips.
  6. Bake for about 10 minutes or until cheese is bubbly and golden.
  7. Invert onto a plate and garnish as desired.
