  • 20 ounces refrigerated cheese tortellini
  • 8 ounces cremini mushrooms (sliced)
  • 1 tablespoon fresh sage (chopped)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil a large pot of salted water. Cook the cheese tortellini according to package instructions until al dente, about 6-8 minutes. Drain.
  2. While the tortellini cooks, heat a skillet over medium-high heat. Melt 1 tablespoon of butter with olive oil.
  3. Add chopped sage to the skillet and cook for about one minute until crispy. Remove and set aside.
  4. In the same skillet, add sliced mushrooms and remaining butter along with minced garlic. Sauté for about five minutes until golden brown.
  5. Combine drained tortellini with sautéed mushrooms in the skillet. Stir in parmesan cheese and crispy sage. Season with salt and pepper to taste.
