  • 2 1/2 cups Oreo crumbs
  • 4 tablespoons unsalted butter (melted)
  • 1 pound pitted cherries (fresh or frozen)
  • 3/4 cup white granulated sugar
  • 24 oz cream cheese (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 4 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, combine Oreo crumbs with melted butter until well mixed. Press firmly into the bottom of a springform pan to create the crust.
  2. For the cherry filling, cook pitted cherries with sugar and cornstarch in a saucepan over medium heat until thickened. Set aside to cool.
  3. In a large mixing bowl, beat room-temperature cream cheese until smooth. Gradually add sugar, sour cream, cherry puree, vanilla extract, and eggs, mixing well after each addition until smooth.
  4. Gently fold half of the cherry mixture into the cheesecake batter. Pour over the prepared crust.
  5. Bake for approximately 70 minutes or until set but slightly wobbly in the center. Allow to cool completely before topping with remaining cherry filling.
