  • 2 cups shredded cooked chicken
  • 8 flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup sour cream
  • 1 can (4 oz) diced green chiles
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken with ½ cup of shredded cheese and half of the diced green chiles.
  3. In a saucepan, melt butter over medium heat; whisk in flour until it forms a roux. Gradually add chicken broth, simmering until thickened. Remove from heat and stir in sour cream.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour the sour cream sauce over the enchiladas and top with remaining cheese.
  6. Bake uncovered for 20-25 minutes until bubbling and golden.
