  • 2 cloves garlic
  • 1 Fresno pepper
  • 1 tsp salt
  • 1 tsp oregano
  • 4 tbsp apple cider vinegar
  • 1/3 cup extra virgin olive oil
  • 1 box pasta of choice
  • 1 red bell pepper
  • 1/2 bunch asparagus
  • 1 cup cherry tomatoes
  • 1 small eggplant
  • 1 zucchini
  • 1/2 red onion
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the chimichurri sauce by blending parsley, garlic, Fresno pepper, salt, oregano, apple cider vinegar, and olive oil. Set aside.
  2. Cook pasta according to package instructions until al dente, then drain and rinse with cold water.
  3. Grill sliced vegetables (bell pepper, asparagus, eggplant, zucchini, red onion) drizzled with olive oil until tender.
