  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • 16 oz cremini mushrooms, quartered

Instructions

  1. Preheat your oven to 350°F.
  2. In a Dutch oven, melt 2 tablespoons of butter over medium-low heat and add beef chuck pieces seasoned with salt and pepper. Sear until browned on all sides. Remove and set aside.
  3. In the same pot, melt remaining butter and sauté onions and carrots until tender. Add garlic and cook for an additional minute before stirring in tomato paste and flour to thicken.
  4. Pour in apple vinegar while scraping up flavorful bits from the bottom of the pot. Add beef stock along with thyme and bay leaves; return seared beef to the pot.
  5. Cover tightly with a lid and transfer to the oven for about 2½ hours.
  6. In a skillet, sauté mushrooms until browned; add pearl onions until golden and combine them into the bourguignon pot for another hour of cooking.
  7. Let rest covered for 30 minutes before serving.
