  • 1 medium onion, diced
  • 1 lb mushrooms, sliced (shiitake and cremini recommended)
  • 3 cups vegetable broth
  • 2 (15 oz.) cans white beans, drained and rinsed
  • 1 lb baby potatoes, diced
  • 2 cups dairy-free milk
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, melt the vegan butter. Add diced onion and sauté until translucent.
  2. Stir in sliced mushrooms with thyme, rosemary, salt, and pepper; cook until browned.
  3. Add minced garlic and cornstarch; then pour in tamari and vegetable broth along with diced potatoes. Bring to a boil.
  4. Reduce heat and simmer uncovered for about 15-20 minutes until potatoes are fork-tender.
  5. Mix in white beans and dairy-free milk; simmer for another 10-15 minutes until creamy.
  6. Adjust seasoning if needed before serving warm topped with fresh parsley.
