  • 16 oz medium portobello mushrooms
  • 1 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 2 garlic cloves
  • 4 oz claw or lump crab meat
  • 4 oz cream cheese (softened)
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh herbs (parsley and chives)
  • Salt
  • Black pepper

Instructions

  1. 1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. 2. Rinse the portobello mushrooms under cold water, dry them, and remove the stems.
  3. 3. In a sauté pan over medium-high heat, heat olive oil and cook the chopped onion and diced mushroom stems until caramelized. Add minced garlic just before removing from heat.
  4. 4. In a bowl, combine sautéed veggies with crab meat. Add cream cheese, egg, bread crumbs, Parmesan cheese, parsley, chives, salt, and pepper; mix well.
  5. 5. Fill each mushroom cap with the stuffing mixture and top with extra Parmesan cheese.
  6. 6. Bake for about 20 minutes or until golden brown.
