  • ¾ cup salted butter
  • 1½ cups light brown sugar
  • 2 large eggs
  • ¾ teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ cup dried cranberries
  • 6 ounces white baking chocolate
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • ½ cup dried cranberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 13×9-inch baking dish with nonstick spray.
  2. In a large bowl, cream together the cubed butter and brown sugar until smooth. Beat in the eggs one at a time along with the vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon before gradually adding it to the wet mixture. Fold in dried cranberries and chopped white chocolate.
  4. Pour the batter into the prepared baking dish and bake for about 20 minutes or until golden brown around the edges.
  5. Allow bars to cool completely. For frosting, beat cream cheese with powdered sugar until smooth, then mix in melted white chocolate.
  6. Spread frosting over cooled bars, top with additional cranberries, slice into squares, and enjoy!
