  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and grease a medium-sized baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a large pot, melt butter over medium heat, then add minced garlic until aromatic. Stir in flour to create a roux, cooking for 1-2 minutes.
  4. Gradually pour in heavy cream while stirring continuously until the sauce thickens (about 5 minutes).
  5. Mix in optional Parmesan cheese, thyme, salt, and pepper until smooth.
  6. In a large bowl, combine sliced potatoes with the sauce, ensuring each slice is well coated.
  7. Arrange potato slices upright in the baking dish and pour any remaining sauce on top.
  8. Cover with foil and bake for 30 minutes; then remove foil and bake another 30 minutes until golden brown.
