  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in a greased round baking dish; drizzle half of the balsamic mixture over them.
  4. Add the remaining potato slices on top and drizzle with the rest of the mixture. Cover with foil.
  5. Bake covered for 45 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
