  • 1 Cup Quinoa (uncooked)
  • 1 Cup Red Cabbage (shredded)
  • 2 Carrots (shredded)
  • 1 Orange Bell Pepper (julienned)
  • 1 Jalapeño (julienned)
  • ½ Cup Edamame
  • 1 Cup Snow Peas (chopped)
  • ½ Cup Cilantro (chopped)
  • 2 1/2 Tbsp Olive Oil
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Rice Vinegar
  • 1 Tsp Sesame Oil
  • 1 Tsp Ginger (grated)
  • 1 Tbsp Lime Juice
  • 2 Tbsp Honey
  • ½ Tsp Salt
  • Sesame Seeds

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions until fluffy.
  2. While quinoa cooks, prepare your vegetables by shredding cabbage and carrots and slicing the bell pepper and jalapeño.
  3. In a small bowl, whisk together olive oil, soy sauce, rice vinegar, sesame oil, ginger, lime juice, honey, and salt for the dressing.
  4. Combine cooled quinoa with chopped vegetables in a large bowl. Pour dressing over the top and toss gently to coat.
  5. Serve topped with sesame seeds for added crunch!
