  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. To make the dressing, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, and salt in a bowl. Mix well and set aside.
  2. Boil water in a pot; add shrimp and cook for 2 to 3 minutes until pink and cooked through. Remove from heat.
  3. Prepare an ice water bath to cool the shrimp immediately after cooking. Let them sit for 3 minutes before draining.
  4. Chop the cooled shrimp into bite-sized pieces. In a mixing bowl, combine shrimp, cucumber, green onions, and dressing until well coated.
