  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper
  • ½ cup gruyere cheese (or more sharp cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Arrange thinly sliced potatoes and onion in rows in the baking dish.
  3. In a saucepan, melt butter over medium heat; whisk in flour, then gradually add almond milk until thickened.
  4. Stir in shredded cheddar cheese, garlic powder, salt, and pepper; mix until smooth.
  5. Pour sauce over potatoes and onions evenly.
  6. Cover with foil and bake for 45 minutes; remove foil, sprinkle with gruyere and parmesan, then bake uncovered for an additional 30-45 minutes until golden brown.
  7. Let cool slightly before garnishing with parsley.
