  • 2 tablespoons olive oil
  • 2 yellow onions
  • 4 garlic cloves
  • 2 dried ancho chiles
  • 1 cup tomato sauce
  • 45 cups beef stock or broth
  • 18 corn tortillas
  • 20 ounces shredded Oaxaca cheese

Instructions

  1. Sauté onions and garlic in olive oil until soft.
