  • 1.2kg Sweet Potatoes
  • 6 tbsp Unsalted Butter (melted)
  • 3 large cloves Garlic (finely grated)
  • 1 tbsp Fresh Rosemary (finely diced)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan (optional)

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel and slice sweet potatoes into 3mm rounds.
  3. Brush muffin tray with melted butter; combine remaining butter with garlic, rosemary, salt, and pepper in a bowl. Toss potato slices until coated.
  4. Stack potato slices in muffin tray cups, brushing leftover butter mixture over top.
  5. Cover with foil and bake for 35 minutes, then uncover and bake at 200C/400F for an additional 15 minutes until golden.
  6. Allow to rest briefly before serving for easier removal.
