  • 1 cup sugar

  • 2 teaspoons grated orange zest
  • 1/2 cup vegetable oil
  • 1 1/2 cups cranberries (fresh or frozen, thawed)
  • 1/3 cup freshly squeezed orange juice
  • 2 to 3 tablespoons fresh orange juice (for glaze)
  • 1/3 cup sugar (for glaze)
  • 1 cup confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, mix yogurt, sugar, eggs, orange zest, vanilla extract, and oil until smooth.
  3. Gently fold the dry ingredients into the wet mixture until just combined.
  4. Toss cranberries in reserved flour before folding them into the batter.
  5. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. Prepare the glaze by mixing confectioners’ sugar with fresh orange juice until smooth; drizzle over the warm loaf.
