  • 1 free-range turkey (about 5 kg)
  • 2 onions (peeled, halved)
  • 1 lemon (halved)
  • 1 head of garlic (halved horizontally)
  • 6 bay leaves
  • Olive oil (for drizzling)
  • Sea salt and freshly ground black pepper
  • 375 g butter
  • 3 cloves garlic (peeled, crushed)
  • 2 small lemons (juice and grated zest)
  • Fresh flat-leaf parsley leaves (chopped)

Instructions

  1. Preheat your oven to 220°C.
  2. In a bowl, mix softened butter with salt, pepper, olive oil, lemon juice, zest, parsley, and crushed garlic.
  3. Season the cavity of the turkey with salt and pepper; stuff with onions, lemons, garlic heads, and bay leaves.
  4. Loosen the skin and spread herb butter underneath it.
  5. Drizzle the turkey with olive oil and rub remaining butter mixture on top.
  6. Lower oven temperature to 180°C; roast for about 2½ hours while basting every half hour.
  7. Let the turkey rest for about 45 minutes before carving.
