  • 2 medium zucchinis, sliced
  • 2 tbsp olive oil
  • 1 cup uncooked quinoa
  • ½ cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Bring the steak to room temperature for about 15 minutes. Pat dry and rub with olive oil, salt, pepper, garlic powder, and smoked paprika.
  2. Preheat your grill or grill pan over high heat.
  3. Toss the zucchini slices in olive oil and sprinkle with salt.
  4. Grill the zucchini for about 2-3 minutes per side until tender with char marks; set aside.
  5. Grill the steak for about 4-5 minutes per side for medium-rare; let it rest before slicing.
  6. Cook quinoa according to package instructions.
  7. Mix sour cream (or yogurt), Dijon mustard, garlic powder, smoked paprika, salt, and optional lemon juice in a bowl for the sauce.
  8. Slice the rested steak against the grain and assemble bowls: layer quinoa, grilled zucchini, steak slices, and drizzle with creamy sauce.
