  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional: diced tomatoes and shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a parchment-lined sheet for 40-50 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes until softened.
  3. Add garlic and bell pepper; cook for another 2-3 minutes.
  4. Stir in ground turkey; cook for 6-8 minutes until browned.
  5. Season with cumin, chili powder, paprika, salt, and pepper; mix well.
  6. Add corn and tomatoes (if using); heat through for about 2-3 minutes.
  7. Slice baked sweet potatoes open lengthwise and fluff insides with a fork. Fill each potato with the turkey mixture.
  8. Top with cheese if desired; return to oven for 5-7 minutes until melted.
