  • 8 lamb chops
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped
  • 4 large potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup heavy cream
  • 1 bunch asparagus, trimmed
  • 1/2 cup apple vinegar
  • 1/2 cup beef broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix olive oil, parsley, rosemary, garlic, salt, and pepper; rub onto lamb chops.
  3. Sear lamb chops in a skillet over medium-high heat for about 2 minutes per side.
  4. Transfer skillet to the oven; roast for 6–8 minutes for medium-rare.
  5. Boil cubed potatoes in salted water until tender (about 15 minutes). Drain and mash with butter and heavy cream.
  6. Toss asparagus with olive oil, salt, and pepper; roast alongside lamb for about 12–15 minutes.
  7. In the same skillet used for lamb, combine apple vinegar and beef broth; simmer until reduced by half. Stir in butter.
