  • 10 sheets phyllo pastry
  • 2 sticks unsalted butter, melted
  • 1 cup roasted walnuts
  • 1 cup roasted almonds
  • 500g cream cheese, room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 250g strained Greek yogurt
  • 1 cup shelled pistachios, coarsely chopped
  • 1 cup honey

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a springform pan by lining it with parchment paper.
  2. Brush phyllo sheets with melted butter and layer them in the springform pan; bake for about 12 minutes until golden brown.
  3. In a food processor, combine walnuts, almonds, cinnamon, and salt until crumbly; mix with melted butter.
  4. For the filling, blend cream cheese, sugar, salt, vanilla extract, lemon zest and juice, cornstarch until smooth; add eggs one by one.
  5. Pour the cream mixture over the nut layer and bake for approximately 45 minutes until golden on top.
  6. Cool completely at room temperature before drizzling with honey mixed with lemon juice and rosewater; top with chopped pistachios.
