  • 1 cup crumbled feta cheese
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 lemon, sliced (for serving)

Instructions

  1. In a medium bowl, whisk together honey, olive oil, apple cider vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over the chicken and coat well. Refrigerate for at least 30 minutes (preferably up to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and place in a baking dish. Spoon feta mixture over each breast.
  4. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and feta is golden.
  5. Allow to rest for 5 minutes before garnishing with parsley and serving with lemon wedges.
