  • 5 cups chicken broth
  • 1 cup heavy cream (or coconut milk for dairy-free)

Instructions

  1. In a large pot, cook and crumble the ground turkey over medium heat until browned (10-12 minutes). Reserve 1 tablespoon drippings.
  2. Add butter to the pot along with reserved drippings; sauté onion, carrots, and celery until softened (about 5 minutes).
  3. Stir in minced garlic and cook for an additional minute. Add flour and stir for another 2 minutes to form a roux.
  4. Gradually add chicken broth while scraping the bottom of the pot to combine.
  5. Add cubed potatoes; bring to a simmer and cook uncovered until fork-tender (20-25 minutes).
  6. Stir in heavy cream and seasonings; heat through before serving.
