  • 4 cups cubed rotisserie chicken (or cooked chicken breast)
  • 3/4 cup no added sugar marinara sauce
  • 1 tbsp Italian seasoning
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 tbsp almond flour
  • 3/4 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup finely crushed parmesan crisps (or beef rinds)
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Add Italian seasoning, marinara sauce, almond flour, and cubed chicken to the skillet. Cook for about five minutes.
  4. Spray a 9″ x 13″ casserole dish with non-stick cooking spray and pour the chicken mixture evenly into the dish.
  5. Layer with grated parmesan cheese followed by shredded mozzarella and crushed parmesan crisps.
  6. Bake for 25-30 minutes until bubbly and golden brown.
  7. Allow to cool briefly before serving.
