  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté diced onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds.
  2. In a large bowl, combine sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into about eight patties that are half an inch thick.
  4. Heat remaining olive oil in a skillet over medium heat and cook patties for 5-6 minutes on each side until golden brown and fully cooked.
  5. Drain on paper towels and serve warm with garnishes like fresh herbs or yogurt sauce.
