  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large whole wheat or spinach tortillas
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted and sliced (optional)
  • Fresh spinach or mixed greens

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper for the marinade.
  2. Marinate chicken breasts in the mixture for at least 30 minutes.
  3. Grill marinated chicken on medium-high heat for 6–7 minutes per side until cooked through.
  4. Spread hummus evenly on each tortilla.
  5. Assemble wraps by adding grilled chicken slices and your choice of veggies and feta cheese.
  6. Roll up each wrap tightly and slice in half to serve.
