  • 6 cups chicken broth
  • ½ cup uncooked rice (or orzo)
  • 2 cups cooked shredded chicken
  • 2 large eggs
  • Juice of 2 lemons (about ½ cup or 120 ml)
  • Salt and pepper to taste
  • Fresh dill (chopped for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot over medium heat, sauté diced onion in olive oil until softened (about 5 minutes). Add minced garlic and cook for another 1-2 minutes until fragrant.
  2. Pour in the chicken broth and bring to a boil. Stir in uncooked rice (or orzo) and reduce heat to simmer for 10-12 minutes, until tender.
  3. In a separate bowl, whisk together eggs until frothy, then gradually add lemon juice while whisking continuously.
  4. Temper the egg-lemon mixture by slowly adding hot broth while whisking. Return the mixture to the pot.
