  • ¾ cup brown sugar (packed)
  • 1 large egg (at room temperature)
  • 1 tsp vanilla extract
  • 1½ cups old-fashioned oats

Instructions

  1. Preheat your oven to 350°F (176°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ground ginger, allspice, cloves, nutmeg, and salt.
  3. In another bowl, whisk melted butter and brown sugar until smooth. Add in the egg and vanilla extract.
  4. Combine the dry ingredients into the wet mixture and stir until just combined. Fold in oats and pecans.
  5. Chill the dough for about 15 minutes in the refrigerator.
  6. Scoop dough onto prepared baking sheets with enough space between each ball.
  7. Bake for 12–15 minutes until golden on the bottom but soft in the center. Let cool before serving.
