  • 4 skinless salmon fillets
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan
  • Freshly ground black pepper (for serving)
  • Chili flakes (for serving)

Instructions

  1. Season salmon fillets with salt, pepper, garlic powder, and paprika.
  2. In a large skillet over medium-high heat, heat olive oil and butter. Sear the seasoned salmon for about 3-4 minutes per side until golden brown. Remove and set aside.
  3. Sauté chopped onion and minced garlic in the same skillet until soft. Stir in thyme and remaining seasoning.
  4. Add orzo to the skillet and toast for one minute before pouring in chicken broth. Bring to a boil, then reduce heat to simmer for around 8 minutes until most liquid is absorbed.
  5. Stir in baby spinach until wilted, followed by lemon juice and Parmesan cheese. Adjust consistency with more broth if needed.
  6. Return salmon to the skillet and heat through for another 2-3 minutes.
