  • 120 g boiling water
  • 200 g granulated sugar
  • 50 g Dutch processed cocoa powder
  • 160 g all-purpose flour
  • 1 tsp instant espresso powder
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 120 g sour cream (room temperature)
  • 75 g vegetable oil
  • 2 large eggs (room temperature)
  • 1 ½ tsp vanilla extract
  • 6 Oreo cookies
  • 200 g butter (cool room temperature)
  • 315 g powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp whole milk (room temperature)
  • 12 Oreos for decoration + extra for crumbling on top

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, mix together flour, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together sugar and eggs until smooth; then add sour cream, vegetable oil, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture while slowly pouring in boiling water. Stir until just combined.
  5. Pour the batter into prepared muffin tins, filling each liner halfway. Bake for about 22 minutes or until a toothpick comes out clean.
  6. Let cupcakes cool completely on a wire rack before frosting.
  7. For the frosting, beat butter and powdered sugar until fluffy; add vanilla extract and milk. Fold in crushed Oreos before frosting the cooled cupcakes.
