  • 1 cup yogurt
  • 500 g chicken (with bones)
  • 2 cups spinach
  • 1 tbsp oil
  • Black pepper: 10-20
  • Cumin seeds: 1/2 tsp
  • Cinnamon sticks: 3"
  • Green cardamom: 7-8
  • 1 tsp ginger garlic (grated)
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tbsp brown onion (crushed)
  • 300 ml water

Instructions

  1. Marinate the chicken in yogurt, garam masala, cumin powder, and salt for at least an hour.
  2. Heat oil in a pan over medium heat and add whole garam masala until fragrant.
  3. Stir in ginger garlic paste and sauté briefly.
  4. Add red chili powder, turmeric powder, and coriander powder; cook for a few minutes.
  5. Incorporate the marinated chicken; cook until browned.
  6. Mix in crushed brown onion and water; let simmer for 20 minutes.
  7. Add ribbon-cut spinach; cook until wilted and combined with the curry.
  8. Garnish with julienne ginger before serving.
