  • 1 cup kosher salt
  • 1 cup packed brown sugar
  • Fresh herbs (rosemary, sage, thyme)
  • 2 quarts vegetable stock
  • 3 tablespoons melted butter
  • Aromatics (celery, carrots, onion)

Instructions

  1. Prepare the brine by combining kosher salt, brown sugar, black peppercorns, and fresh herbs in a large pot. Add vegetable stock and enough ice water to submerge the turkey. Let it brine overnight.
  2. Preheat your oven to 325°F (165°C). Remove the turkey from the brine, rinse under cold water, and pat dry.
  3. Stuff the turkey cavity with celery, carrots, onion pieces, and any leftover apple bits.
  4. Brush melted butter over the skin and sprinkle with salt. Roast for approximately 2 hours and 30 minutes or until the internal temperature reaches 165°F (74°C), basting every 30 minutes.
