  • 1.5 pounds ground beef
  • 4 cups diced pumpkin (like Hokkaido)
  • 3 tbsp olive oil
  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • 1.75 cups beef broth
  • 3 cups puréed tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp dried marjoram
  • ½ tsp chili flakes (optional)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium-low heat. Sauté shallots, garlic, and celery until soft.
  2. Add diced pumpkin; cook for 5 minutes. Stir in fennel and cook for another 3 minutes.
  3. Increase heat and add ground beef; cook until browned.
  4. Season with herbs, chili flakes, salt, and pepper. Pour in beef broth and bay leaf; simmer for 10 minutes.
  5. Add puréred tomatoes and tomato paste; cover and simmer until pumpkin is tender.
  6. Cook pasta according to package instructions; serve topped with bolognese sauce, ricotta, fresh thyme, and chili flakes.
