  • 2 tbsp unsalted butter, cut into pieces
  • 2 1/4 tsp active dry or instant yeast
  • 1 1/2 tbsp granulated sugar
  • 1/4 cup lukewarm milk
  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup pumpkin puree
  • 3/4 tsp salt
  • 1 1/2 tsp dried rosemary
  • 3/4 tsp ground cardamom

Instructions

  1. Melt butter in a pan over medium heat until golden brown; set aside to cool.
  2. In a stand mixer bowl, combine yeast, sugar, and lukewarm milk; let sit for 5-10 minutes until bubbly.
  3. Add cooled brown butter, flour, egg, pumpkin puree, salt, rosemary, and cardamom; knead on medium-low speed for 20-25 minutes until dough is smooth.
  4. Cover the bowl with plastic wrap or a damp cloth; let rise in a warm spot until doubled in size (about 45 minutes).
  5. Turn out the dough onto a floured surface; divide into 8 pieces and shape into balls.
  6. Place balls in a greased baking tin; cover with a towel and let rise again for another 45 minutes.
  7. Preheat oven to 375°F (190°C). Brush tops with an egg wash made from beaten egg mixed with milk or water.
  8. Bake for 20-25 minutes until golden brown and hollow-sounding when tapped.
