  • 100 grams golden sugar
  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams powdered sugar
  • 187 grams powdered sugar (for the buttercream)
  • 1 tbsp meringue powder
  • 4 tbsp water
  • Gel food coloring (black and yellow)

Instructions

  1. Sift almond flour and powdered sugar into a bowl.
  2. In another bowl, whip egg whites until soft peaks form. Gradually add golden sugar until stiff peaks form.
  3. Gently fold dry ingredients into the meringue until combined.
  4. Pipe small circles onto parchment-lined baking sheets and let rest for 30 minutes.
  5. Bake at 300°F (150°C) for 15-20 minutes.
  6. For the filling, cream together butter and powdered sugar; mix in extracts.
  7. Assemble by filling half of the macaron shells with buttercream and topping with another shell.
  8. Decorate with royal icing and shredded coconut.
