  • 2 cups (250g) all-purpose flour
  • 1 Tablespoon (12g) granulated sugar
  • 2 and 1/2 teaspoons baking powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 Tablespoons chopped fresh chives
  • 1 cup (about 100g or 3.5 oz) shredded cheddar cheese
  • 1/2 cup (113g) unsalted butter, frozen
  • 2/3 cup (160ml) cold buttermilk
  • 1 large egg, separated
  • 3/4 cup (about 110g or 3 oz) finely chopped cooked chicken
  • optional for topping: flaky sea salt

Instructions

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, garlic powder, salt, and black pepper.
  3. Stir in chopped chives and shredded cheddar cheese.
  4. Grate frozen butter into the mixture and combine until it resembles coarse crumbs.
  5. In another bowl, whisk together cold buttermilk and egg yolk; add to the dry ingredients along with chopped chicken. Mix gently until just combined.
  6. Turn dough onto a floured surface; shape into an 8-inch disc and cut into wedges or scoop onto the baking sheet for drop scones.
  7. Brush with a mixture of reserved egg white and buttermilk; sprinkle with sea salt if desired.
  8. Chill in the refrigerator for at least 15 minutes before baking for better texture.
  9. Bake for 22-25 minutes until golden brown.
