  • 250 g all-purpose flour
  • 100 g butter
  • 100 ml boiling water
  • 400 g ground lamb (or ground beef, chicken, or turkey)
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 beaten egg (for brushing)

Instructions

  1. To make the pastry, heat butter with boiling water until bubbling. Combine with flour and half the salt in a bowl, stir well, then knead until smooth.
  2. For the filling, mix the ground meat with onion and spices thoroughly.
  3. Roll out the pastry, cut into circles for bases and tops, and line muffin tins or pie rings with larger circles.
  4. Fill each pastry case generously with the meat mixture. Moisten edges before sealing with pastry tops and crimping closed.
  5. Brush with beaten egg and bake in a preheated oven at 180°C (350°F) for about 30–35 minutes until golden brown.
  6. Let cool briefly before serving.
