  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 large yellow onion, chopped
  • 46 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 4 cups low-sodium chicken broth
  • 1.5 cups uncooked orzo pasta
  • 4 oz cream cheese, softened
  • 3/4 cup grated Parmesan cheese

Instructions

  1. If desired, sear the chicken in olive oil for added flavor.
  2. Sauté chopped onion until softened; add minced garlic and herbs.
  3. Deglaze with white grape juice (if using).
  4. Layer chicken over onion mixture and pour in the broth.
  5. Add half the parsley and fresh herbs if desired.
  6. Cook on LOW for 5-7 hours or HIGH for 3-4 hours until chicken is tender.
  7. Shred the chicken in the slow cooker and stir in uncooked orzo.
  8. Mix in cream cheese and grated Parmesan until melted and smooth.
  9. Finish with remaining parsley and lemon zest before serving.
