  • 1 tablespoon Fine Kosher Salt
  • 1 1/2 tablespoons Garlic Powder
  • 1/2 tablespoon Ancho Chili Powder
  • 1 tablespoon Ground Black Pepper
  • 1 tablespoon Onion Powder
  • 1/2 tablespoon Dried Oregano
  • 1/2 tablespoon Dried Thyme
  • 5 pounds Chicken Wings
  • 44 1/2 tablespoons Olive Oil, Divided
  • 4 tablespoons Baking Powder
  • 4 tablespoons Butter

Instructions

  1. Mix the dry rub: Combine dark brown sugar, smoked paprika, fine kosher salt, garlic powder, ancho chili powder, ground black pepper, onion powder, dried oregano, and dried thyme in a bowl.
  2. Prepare the wings: Pat chicken wings dry; drizzle with olive oil and coat with baking powder and the dry rub.
  3. Air fry: Preheat air fryer to 375°F (190°C) and cook the wings in batches for 18-20 minutes, flipping halfway for even crispiness.
  4. Make the glaze: In a skillet over low heat, melt butter and whisk in additional dry rub and olive oil until combined.
  5. Toss the wings: After cooking, toss the wings in the glaze and serve hot.
