  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 1/2 tablespoon cumin
  • 1/2 tablespoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Monterey jack cheese
  • 20 egg roll wrappers

Instructions

  1. In a large bowl, combine the cooked chicken, corn, black beans, spinach, red bell pepper, and jalapeno.
  2. Add cumin, chili powder, salt, black pepper, and mix well. Fold in the shredded cheese until evenly distributed.
  3. Lay an egg roll wrapper on a clean surface with one point facing you. Place 2-3 tablespoons of filling in the center. Fold up the bottom corner over the filling, tuck in the sides tightly, and roll it up while sealing edges with water.
  4. Place rolled egg rolls on a baking sheet until ready to cook. Freeze for later use or fry/bake until golden brown.
