  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice (for basting)

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the hens dry and rub them inside and out with olive oil, salt, pepper, garlic powder, thyme, and paprika.
  2. In a bowl, combine bread crumbs, onion, celery, carrots, raisins (if using), nuts (if using), fresh parsley, chicken broth, and melted butter until mixed.
  3. Stuff each hen with the prepared mixture without overstuffing. Tie the legs together if desired.
  4. Place hens in a roasting pan and baste them with white grape juice or apple juice. Roast for about 1 hour and 10 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  5. Let rest for 10 minutes before carving and serving.
