  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 eggs
  • 1/4 cup shredded Parmesan
  • Fresh parsley, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook jumbo shells until al dente, drain, and set aside.
  3. In a skillet, heat olive oil over medium heat; sauté diced bell peppers until soft. Add ground beef and cook until browned. Stir in marinara sauce and seasonings; simmer for a few minutes.
  4. In a bowl, mix ricotta cheese, chopped spinach, eggs, mozzarella cheese, garlic powder, and salt until well combined.
  5. Stuff each shell with the ricotta mixture generously.
  6. Spread some meat sauce in a baking dish; arrange stuffed shells in a single layer on top. Pour remaining meat sauce over the shells.
  7. Cover with foil and bake for 20 minutes; uncover and top with mozzarella cheese. Increase oven temperature to 375°F (190°C) and bake for an additional 15 minutes or until bubbly.
