  • 32 ounces Brussels sprouts
  • 4 large eggs
  • 1 large grinder roll
  • 1 tablespoon unsalted butter
  • ½ cup mayonnaise
  • 2 teaspoons deli-style mustard
  • 2 tablespoons lemon juice
  • â…“ cup shredded Parmesan cheese (or nutritional yeast for dairy-free)
  • ½ tablespoon everything bagel seasoning
  • 2 teaspoons olive oil
  • â…› teaspoon Kosher salt
  • â…› teaspoon black pepper
  • Salt and black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the grinder roll into cubes and toss with melted butter and everything bagel seasoning. Spread on a baking sheet and bake until golden (10-15 minutes).
  2. Boil water in a pot and add eggs. Cook for 9-12 minutes, then transfer to an ice bath before peeling.
  3. Shred the Brussels sprouts and toss with olive oil, salt, and pepper. Roast on another baking sheet for 15-20 minutes until tender.
  4. In a bowl, whisk together mayonnaise, mustard, lemon juice, minced garlic, and salt/pepper to taste.
  5. Combine warm Brussels sprouts with half of the dressing in a large bowl. Top with croutons, halved eggs, and additional dressing as desired.
