  • 1 pound lean ground beef
  • 1 medium onion, finely diced
  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend, divided
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the meat is cooked through; drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 2-3 minutes.
  4. In a separate bowl, mix the cream of mushroom soup with sour cream until smooth.
  5. In a greased baking dish, layer half of the meat mixture followed by half of the creamy mixture, one cup of cheese, and half of the crushed Doritos. Repeat layers and finish with remaining cheese on top.
  6. Cover with foil and bake for 15 minutes; uncover and bake for an additional 10 minutes until bubbly and golden.
  7. Let rest for 5-10 minutes before serving.
